Chicago's seafood scene ignores the lake sitting right there. Most of what gets called seafood on Chicago menus is ocean fish flown in from both coasts, same as any landlocked city. The exception is the smoked-fish shacks holding on near the Skyway on the South Side, chub and shrimp cured the way it's been done since the 1920s. That's the real test here: does a kitchen know what to do with something that wasn't flown in that morning, or is it just another raw bar with good lighting.
