Austin's ramen didn't come out of a strip mall — Tatsu-Ya started as a trailer and spread outward to Dallas and Houston, which means the city exports its ramen instead of importing someone else's version of it. The real density is north, along the Asian corridor near Rundberg. The distinctly Austin move is the Tex-Mex crossover — mole tsukemen, carnitas in the tonkotsu — and that only works if the broth still holds up underneath the gimmick.
